Blueberry Banana Oat Bread


September is fast approaching and so is the need for nut-free school lunches and snacks! Here is a nut-free, school-friendly recipe for Blueberry Banana Oat Bread! Pair this with some cheese, hard boiled egg, or nut-free seed butter for a delicious, filling recess snack!

Ingredients:

  • 1 1/4 cup rolled oats

  • 1 1/4 cup light spelt flour

  • 1/3 cup coconut sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • pinch of salt

  • 2-3 ripe bananas

  • 1/4 cup milk of choice

  • 1/4 cup applesauce

  • 1 tsp vanilla extract

  • 1 cup blueberries

Recipe:

  1. Preheat oven to 350 F/180 C.

  2. In a large mixing bowl, combine dry ingredients (rolled oats, spelt flour, coconut sugar, baking powder, baking soda, cinnamon, salt).

  3. In a medium mixing bowl, mash bananas with wet ingredients (milk of choice, applesauce, vanilla extract).

  4. Add wet ingredients to dry ingredients, mix until just combined.

  5. Fold in blueberries.

  6. Pour the batter into a parchment paper-lined loaf pan.

  7. Bake for 50-55 minutes, or until done.

  8. Enjoy!
