Morning Muffins: Carrots, Apples, & Oats


Is your go-to breakfast a coffee and pastry from your favorite coffee shop? Save your money and cut down on the excess fat and sugar often found in coffee shop baked items by making a healthier homemade morning muffin!

While muffins can be high in added sugars and fat, this recipe uses skim milk and is a great source of fibre from the rolled oats, carrots, and apples. Pair these muffins with a homemade latte and you'll have a healthy, filling breakfast on the go!

The recipe is also easy, quick, and with minimal clean-up. With a final hint of cinnamon sweetness, the kitchen will smell like your local coffee shop!

Baker's tip: for light, airy muffins, mix just until no lumps are there. Do not beat or over mix.

Recipe (for 12 muffins):

Dry ingredients:

  • 2 cups flour

  • 1 cup rolled oats

  • 2 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2-1 tsp ground cinnamon

  • 3/4 cup brown sugar

Wet ingredients:

  • 2 eggs

  • 1 tsp vanilla

  • 1/2 cup vegetable oil

  • 1/2 cup skim milk

  • 1 cup grated carrots (around 2 medium carrots)

  • 1 cup grated granny smith apple (around 1 apple)

Directions:

  1. Preheat oven at 356 F.

  2. Line a cupcake/muffin tray with paper muffin cups.

  3. Mix dry ingredients in a bowl. Add grated carrots and apples to the dry ingredients making sure to coat them in flour.

  4. In another bowl, mix the liquid ingredients.

  5. Add liquid ingredients to dry ingredients and mix using a spatula/spoon until no lumps in mixture. Avoid beating or over-mixing.

  6. Spoon mixture into paper cups (3/4 full) and bake for 12-15 minutes.
