Recipe (for 12 muffins):
2 cups flour
1 cup rolled oats
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2-1 tsp ground cinnamon
3/4 cup brown sugar
1 tsp vanilla
1/2 cup vegetable oil
1/2 cup skim milk
1 cup grated carrots (around 2 medium carrots)
1 cup grated granny smith apple (around 1 apple)
