Creamy Vegan Parmesan Pasta

This recipe starts with perfectly cooked pasta of your choice, which is then tossed in a luscious sauce with mixed veggies, nutritional yeast, and a blend of herbs and spices. The result is a velvety smooth while also being very nutritious.

Ingredients
  • 1 tbsp olive oil

  • 1 cup mushrooms, diced

  • 2 garlic cloves, minced

  • 1/4 cup diced red onion

  • 2 handfuls of spinach

  • 1/4 cup cherry tomatoes, chopped

  • Pinch of red pepper flakes

  • 1 cup whole wheat pasta, dry

  • 2/3 cup unsweetened plant-based milk

  • 1/4 cup pasta water (from cooking)

  • 1/4 cup plant-based parmesan cheese

  • 1 tsp salt

  • 1 tsp black pepper


  1. Bring a pot of water to a boil, cook pasta according to the package

  2. Place a saucepan over medium heat, add the olive oil, red onions & garlic until golden/brown

  3. Add salt, pepper, red pepper flakes, mushrooms & tomatoes, sauté until soft

  4. Add almond milk, plant-based parmesan and mozzarella flavoured shreds, and bring to a simmer (approximately 1 minute)

  5. Add spinach and stir

  6. Strain pasta (saving V4 cup of pasta water) & pour pasta over the sauce, add the pasta water

  7. Mix until pasta and sauce are well-combined

  8. Serve, sprinkle with extra parmesan, and enjoy!
