1 tbsp olive oil
1 cup mushrooms, diced
2 garlic cloves, minced
1/4 cup diced red onion
2 handfuls of spinach
1/4 cup cherry tomatoes, chopped
Pinch of red pepper flakes
1 cup whole wheat pasta, dry
2/3 cup unsweetened plant-based milk
1/4 cup pasta water (from cooking)
1/4 cup plant-based parmesan cheese
1 tsp salt
1 tsp black pepper
Bring a pot of water to a boil, cook pasta according to the package
Place a saucepan over medium heat, add the olive oil, red onions & garlic until golden/brown
Add salt, pepper, red pepper flakes, mushrooms & tomatoes, sauté until soft
Add almond milk, plant-based parmesan and mozzarella flavoured shreds, and bring to a simmer (approximately 1 minute)
Add spinach and stir
Strain pasta (saving V4 cup of pasta water) & pour pasta over the sauce, add the pasta water
Mix until pasta and sauce are well-combined
Serve, sprinkle with extra parmesan, and enjoy!
