Lemon Coconut Chia Pudding

Has the chia pudding movement passed because we are still loving using chia seeds to whip up different flavours of chia pudding and chia mousse! Chia pudding definitely has a specific texture that may not be loved by everyone BUT we are huge fans and therefore, will continue to share all things chia pudding related.

We often opt for a chocolate flavour chia pudding because HELLO, everything tastes better with chocolate but we know not everyone loves chocolate as much as we do so we decided to mix it up and try something new. This lemon coconut chia pudding is fresh, vibrant and oh so creamy! Did we mention it only has 6 ingredients? If you have an extra 10 minutes to spare in the evening, then we urge you to try making this tasty pudding. The next day you will be blessed with a decadent breakfast, snack, or dessert!


Makes 2 servings

Ingredients:

  • ¼ cup chia seeds

  • 2 tbsp shredded coconut

  • ½ lemon (zested and juiced)

  • 1-2 tbsp maple syrup or honey

  • ¼ cup plain Greek yogurt

  • 1 cup milk of choice (use coconut milk to enhance coconut flavour)

Method:

  1. To a jar add the chia seeds, shredded coconut, lemon zest, lemon juice, maple syrup and Greek yogurt and stir until combined.

  2. Add the milk and stir again. Let sit on the counter for 5-10 minutes before stirring once more and then place in the fridge for a couple of hours or overnight to thicken up.
