Creamy ~ Rich ~ Decadent
This mousse is all 3! Would you be surprised if we told you this recipe uses only 5 ingredients? Would you be even more surprised if we told you that one of those ingredients is tofu? That’s right, TOFU! Using soft/silken tofu in this recipe gives this mousse such an incredible texture plus it makes this a great HIGH PROTEIN dessert option. You can top this mousse with fresh berries, granola, or just eat it straight out of the food processor like we did because it truly is that tasty!
1 block soft/silken tofu
1-2 tbsp of instant coffee (depending on how strong you want the coffee flavour)
1-2 tbsp maple syrup or honey
1 tsp vanilla extract
1 cup dark chocolate chips
Add the chocolate chips to a microwave-safe bowl and microwave in 30 seconds intervals, stirring in between, until melted. Let the melted chocolate cool slightly.
To a food processor or blender, add the tofu, coffee, maple syrup and vanilla extract and blend until smooth.
Add the melted chocolate that has been cooled and blend again until fully combined.
If you have the patience, place in the fridge for an hour to chill (or just devour on the spot like we did).
Store in an airtight container in the fridge.
