Creamy Avocado Pasta Sauce

Whether you think avocados are a fruit or vegetable, there is no doubt that avocados have become increasingly popular over the past few years. I love experimenting with different recipes that avocados can be used in. From baked foods to smashed on toast, the possibilities are endless. I was so excited to try making a pasta sauce out of avocados. This recipe is so surprisingly easy and has so few ingredients it can be whipped up in about 5 minutes. This light pasta sauce would be perfect for a sunny spring or summer day and even tastes great on cold pasta noodles!



Avocados are a great source of healthy fats, fibre, and vitamins. Add additional veggies and a source of protein such as chicken or tofu to your pasta, and you'll have a wonderfully balanced and nutritious meal that tastes delicious. I also love to add a few leaves of fresh basil to enhance the flavour of the sauce. Although it will taste great with finely chopped basil, I prefer to use a blender or food processor to ensure the leaves are chopped finely and distributed evenly.


If you choose to add vegetables to your sauce, I recommend adding raw fresh veggies if you are enjoying your pasta cold, and warm pre-cooked veggies if you prefer to have it warm. But it is totally up to you! I added uncooked cherry tomatoes to the warm pasta sauce and it was delicious! If you want to add protein, it is important to cook your protein of choice prior to adding it to the sauce. If you are choosing to eat the sauce and pasta cold, let your protein cool completely before adding it to the sauce.

Ingredients:

  • 2 ripe avocados

  • 1 tablespoon of olive oil

  • 1-2 tablespoons of fresh lemon juice

  • 1-2 cloves of garlic, crushed

  • Salt and pepper to taste

  • Optional: Fresh basil leaves

Recipe:

  1. In a bowl, mash the avocados.

  2. Add the rest of the ingredients and mix well.

  3. Cook pasta of choice as per directions

  4. Stir avocado mixture into cooked pasta

  5. Add any vegetables or protein you love

  6. Enjoy!
