Chickpea Salad Sandwich

Tired of having the same old sandwich for lunch? Wanting to incorporate more plant-based proteins in your diet but don't know how? Mix it up with this chickpea salad sandwich! This vegetarian sandwich is a great source of plant-based protein and fibre!


  • 2 slices whole grain bread

  • 2 kale leaves,

  • 2 slices of heirloom tomato

  • 1 pickle, sliced (optional)

Chickpea Salad:

  • ¼ cup canned chickpeas (rinsed & drained)

  • 1 tbsp vegan mayonnaise

  • 1 tsp dijon mustard

  • ¼ tsp garlic powder

  • 1 tbsp chopped red onion

  • 3 red grapes, diced

  • 1 tbsp fresh dill, chopped

  • Salt & Pepper


  1. Toast 2 slices of bread

  2. In a small mixing bowl, combine chickpeas, vegan mayo, dijon mustard, garlic powder, red onion, grapes, fresh dill, and salt and pepper to taste. Mash and mix well with a fork until well combined.

  3. Spread chickpea mix onto one slice of bread. Top with kale leaves, sliced tomato, and pickle. Enjoy!
