Chickpea Nut Butter Blondies


Aside from how delicious these are, these are SO easy to make. You probably have most of the ingredients in your pantry already, so why not give them a go?!


Adding chickpeas to brownies is a great way to increase protein & fiber. Chickpeas contain soluble fiber, which can help improve bowel function and overall gut health.


Here are the dEATS...

Ingredients:


¼ cup almond flour (can also sub for regular flour if desired)

¼ cup maple syrup

1 can rinsed + drained chickpeas

½ tsp baking powder

½ tsp baking soda

1 ripe banana

1 cup nut butter

1 tsp cinnamon

1 tbsp coconut oil

1/2 cup chocolate chips







Instructions:

  1. Preheat oven to 350 F

  2. Blend all of the ingredients (except the chocolate chips) in a food processor until the dough is thick and creamy. You want it to be similar to a cookie dough texture!

  3. Fold in the chocolate chips

  4. Line an 8”x11” baking dish with parchment paper OR grease with coconut oil

  5. Bake at 350 F for 20-22 minutes

  6. Let cool for ~ 10 min and enjoy!
