Get the best out of apple season with these crumble bars! Warning: these are definitely crumbly. But don't fret because you can also use this as a topping for many things like yogurt or ice cream! If you try this recipe, tag us in your photos on Facebook and Instagram @VancouverDietitians!
Ingredients
Base:
1 cup almond flour
1 cup rolled oats
1 flax egg: 1 tbsp flax meal + 2 tbsp water
¼ cup coconut oil, melted
2 tbsp honey
¼ tsp cinnamon
Apple filling:
2 cups apple, sliced into small pieces
¼ cup water
1 tbsp brown sugar
¼ tsp cinnamon
Recipe:
Preheat the oven to 375F.
In a large bowl, combine the almond four, rolled oats, flax egg, coconut oil, honey and cinnamon.
In a 9x9 pan lined with parchment paper, take 2/3 of the oat mixture and evenly pack it as a layer.
Pre-bake the crust for 5 minutes.
In a small sauce pan on medium heat, add the apples, water, brown sugar and cinnamon. Simmer for 10 minutes or until soft and jammy.
Spread the apple filling on the pre-baked crust and top it off with the reserved oat mixture.
Bake at 375F for another 10-15 minutes or until golden brown.
Cool completely before cutting.
