Apple Cinnamon Crumble Bars

Get the best out of apple season with these crumble bars! Warning: these are definitely crumbly. But don't fret because you can also use this as a topping for many things like yogurt or ice cream! If you try this recipe, tag us in your photos on Facebook and Instagram @VancouverDietitians!


Ingredients

Base:

  • 1 cup almond flour

  • 1 cup rolled oats 

  • 1 flax egg: 1 tbsp flax meal + 2 tbsp water 

  • ¼ cup coconut oil, melted

  • 2 tbsp honey

  • ¼ tsp cinnamon

Apple filling:

  • 2 cups apple, sliced into small pieces

  • ¼ cup water 

  • 1 tbsp brown sugar

  • ¼ tsp cinnamon 

Recipe:

  1. Preheat the oven to 375F.

  2. In a large bowl, combine the almond four, rolled oats, flax egg, coconut oil, honey and cinnamon.

  3. In a 9x9 pan lined with parchment paper, take 2/3 of the oat mixture and evenly pack it as a layer.

  4. Pre-bake the crust for 5 minutes.

  5. In a small sauce pan on medium heat, add the apples, water, brown sugar and cinnamon. Simmer for 10 minutes or until soft and jammy.

  6. Spread the apple filling on the pre-baked crust and top it off with the reserved oat mixture.

  7. Bake at 375F for another 10-15 minutes or until golden brown.

  8. Cool completely before cutting.
