We're a fan of easy, quick, nutritious snack ideas. These bars a good source of protein, fibre, and healthy fats - just what you want in your snack!
Make this recipe on the weekend so you have easy snacks throughout the week. You can also store them in the freezer to prolong their shelf life!

Ingredients:
1 cup PB&Me (or other powdered nut butter)
4 tbsp cacao powder
1/2 cup oats (gluten free optional)
1/2 cup cashews
1/4 cup honey or maple syrup
1/2 cup soaked dates
1 tbsp coconut oil
1/2 cup chocolate chips
Optional toppings: shredded coconut, chocolate chips, other nuts or seeds
Directions:
Blend dry ingredients in a food processor until mealy
Add honey/maple syrup, dates, chocolate chips, and coconut oil. Add more sweetener or coconut oil to adjust texture as desired (more sweetener/coconut oil = more moist)
Mould mixture into balls or press into a square baking dish. Add toppings as desired. Chill for ~20 minutes before cutting into bars.
