Crispy Maple Salmon

Vancouver Dietitians recently partnered with a local, sustainable food company - MeatMe. If you include animal products in your diet, it is important to think about the sustainability of your choices, and the impact they have on the environment and local economy. At MeatMe, they work with small, local family farmers who are committed to the highest animal welfare standards. None of the animals are given hormones or antibiotics, and you can be sure you are always getting ethically raised, locally sourced products.

We did some recipe testing with their fish products, which are sourced from the Haida Wild fishery in Haida Gwaii. We are so lucky to have access to such amazing fish, and it is important to source these products in a sustainable way so that we can continue to enjoy them! We wanted to create a Canadian-inspired recipe, and so of course we chose maple syrup! We hope you enjoy this recipe, be sure to tag us in your photos on Instagram! @vancouverdietitians

Recipe:

Total 16 minutes

Serves 4-6

Ingredients

  • 2 x 0.6 lb MeatMe salmon fillets (2 portions) with skin

  • Salt and freshly ground black pepper

  • 4 tablespoons olive oil margarine or unsalted butter, softened

  • 2 cloves garlic, minced

  • 2 tbsp pure maple syrup

  • 2 tbsp soy sauce

  • 2 tbsp fresh squeezed lemon juice, (plus extra to serve)

  • Lemon wedges to serve

Directions

  1. Pat salmon dry with paper towels. Season the salmon with salt and pepper. Cut each salmon piece lengthwise in half
     

  2. Preheat the broiler to high
     

  3. Grease a baking sheet with margarine or butter. Place salmon onto the baking sheet, skin-side-up. Rub 2 tablespoons margarine or softened butter all over the skin of the salmon
     

  4. Place the salmon in the middle of the oven, or about 6 inches away from the heat element. Cook until the skin is golden brown and crispy, and the fish is almost cooked through - about 5 1/2 minutes
     

  5. While the salmon is in the oven, whisk together the remaining butter, minced garlic, maple syrup, soy sauce, and lemon juice in a saucepan, and cook on the stove over medium-high heat
     

  6. Take salmon fillets out of the oven
     

  7. Once the mixture in the saucepan is simmering, add salmon fillets skin-side-up into the pan. Cook in the marinade for 2-3 minutes., or until desired doneness of salmon is achieved
     

  8. Remove salmon fillets from saucepan, and garnish with sliced lemons. Serve immediately over a bed of brown rice and roasted vegetables. Enjoy!
